Golden Parmesan Potatoes

We found this recipe in the – Best of the Best from Minnesota Cookbook.  It offers selected recipes from Minnesota’s favorite cookbooks.  Earlier in the year, we had made the tasteful Peaches and Cream Muffins out of it.  We are hoping this is a prized one as well.

Golden Parmesan Potatoes
~First United Methodist Church Cookbook

6 large potatoes
¼ cup flour
½ cup Parmesan cheese
 ¾ teaspoon salt
1/8 teaspoon pepper
1/3 cup butter

Peel potatoes & cut into quarters.  Combine flour, cheese, salt and pepper in bag.  Moisten potatoes with water and shake a few at a time in bag until coated with cheese mixture.  Melt butter in 9x13 inch baking pan and place potatoes in pan.  Bake at 375 for about an hour.  Turn once during baking.

Tupps Tidbits ~ if they are large pototoes they might not cook all the way thru if you cut in quarters, I recommend cutting them smaller (we used red potatoes)

Easy to make, good but them were nothing extra special. It did put a spin on your plain roasted potatoes.  We would probably make these again.  DEFINITELY A KEEPER!

Ham Balls

Several of us have made homemade meat balls but have
you ever heard of Ham Balls?
My co-worker’s grandma was the head cook in their school system. Grandma “Ham Ball” came up with this recipe and made them for “her kids”…hundreds of them including her granddaughter.  Lucky for us, this Missouri dish made its way to Rochester, MN.  Let’s try Ham Balls!

Ham Balls – Karla “Ham Ball” Hamilton

3 lb. ham loaf (Fareway Foods)
1 sleeve graham cracker crumbs (preferably…Cinnamon Grahams)
2 eggs
1 ½ cup Buttermilk (reg. milk ok)

Sauce:
¼ cup cider vinegar
1 Tbs. dry mustard
1 can tomato soup
¾ cup brown sugar

Mix meat, graham cracker crumbs, eggs, and milk.  Roll or use scoop to shape into balls the size of an egg or small scoop of ice cream.  Place on cookie sheet lined with foil and sprayed with Pam.  Mix sauce and pour over ham balls.  Bake at 350 degrees for 50 minutes. Turn on custom broiler and finish at 420 degrees for another 10 minutes.  Total cooking time is 1 hour. Makes 2-3 dozen. 

Tupps Tidbits ~ we bought our ham loaf from Fareway Foods, but you could make your own loaf by grinding ham with pork loin at a 2 to 1 ratio

Even though we have never heard of ham balls, looking into it, we did find similar ham ball or ham loaf receipes.  This is definitely not a secret recipes, but usually unknown to Minnesotans.  DEFINITELY A KEEPER!
